We want you to enjoy a heaping plate of the ultimate in warming, delicious comfort food, without feeling sluggish and awful afterwards.

Today, I want to share just 3 essential winter recipes with you, all of them are vegan and will infuse your body with nutrients while satisfying your comfort food craving.

Vegan Miso Mushroom Lasagne
Okay, so lasagne is a staple when it comes to homemade comfort food, but of course it’s usually made with mince, a big no-no if meat isn’t your thing.
Fortunately, I discovered this mouth-watering recipe, that truly seems too good to be true. But isn’t, hallelujah!
A combo of different mushrooms provide that “meatiness” while flooding your body with antioxidants. Miso adds some fermentation for a healthy gut, and nutritional yeast adds a hefty dose of mood-boosting Vitamin B12.
This one also features brazil nuts (did you know just one Brazil nut a day can combat depression?) and coconut water for an electrolyte boost!

Oven Roasted Tomato and Zucchini Pasta
If you tell me you aren’t a pasta lover then you are going to have to prove it because I simply don’t believe it!
You cannot go wrong with a zesty, warming pasta to provide comfort on a cold day!
This beautiful recipe combines roasted tomatoes, brimming in a special antioxidant called lycopene, along with zucchini and fresh basil and oregano to keep it fresh and light.
You could even add vegan sausages to this one if you wish, but that option is totally up to you, it’s not necessary for this to still be a comforting, filling meal!
Butternut Squash Veggie Pizza
When I think of comfort food, pizza tends to pop up in my mind; I think we can all agree it’s the ultimate in comfort!
If you’re a tomato base sauce lover when it comes to your pizza, then this one may throw you for a loop, until you try it that is!
Butternut is an essential winter ingredient, jam-packed in vitamins, minerals and antioxidants to provide some incredible health benefits! It’s creamy and delicious as the sauce on this pizza and the perfect warming ingredient, in my opinion.
Throw in some broccolini, fiber-rich chickpeas, oregano and red onion for a pizza you will be making again and again!
